Mexican Hot Chocolate

It may be unseasonably warm for this time of year, but it is still fun to cozy up with the people you love and savor a warm cup of hot chocolate. This was our inspiration for the Mexican Hot Chocolate macaron this year. We hope you enjoy!

WHAT YOU WILL NEED (makes 2 cups)

2 cups of whole milk
4 tablespoons of cocoa powder, natural or Dutch-processed
pinch of salt
3 oz of Mexican sweet chocolate, like La Frontera or Ibarra, chopped. (you can use any semisweet or bittersweet chocolate you like)

1. In a medium saucepan, heat the milk with the cocoa powder and salt, whisking constantly until it comes to a full boil.

2. Remove from heat and add the chocolate, whisking gently until it’s completely melted. If desired, blend the mixture with an immersion blender until smooth.

3. Serve warm.

Garnish with a cinnamon stick or top with whipped cream or mini marshmallows.
